Living, fresh or salt. It just has to be a living fish. There could be
several catagories actually, experimentally, naturally, and reproducing
at a given temperature (the former two just indicate that they can
tolerate it).

Most of that is related to myths and legends. One of the other problems
is that hot water flows over the top of cool water, thus one has to get
the temperature exactly where the fish is living to be accurate.
